The Story of
Koshu Wine Beef

History and Origins
"Koshu Wine Beef" was born from the desire of livestock farmers in Yamanashi Prefecture to "create sustainable, high-quality beef by utilizing wine by-products." With a history of over 40 years, it is a highly regarded brand of beef both inside and outside Yamanashi Prefecture.

Flavor Profile
Its greatest feature is its fine meat quality and subtle sweetness. The polyphenols from the grape pomace transfer to the fat, making it clean and easy on the stomach. Rich in umami components (amino acids), you can fully enjoy the deep, natural flavor of the lean meat.

Sustainability
By utilizing the by-products of the wine industry for feed, this "circular livestock farming" reduces environmental impact. It is "beef for the future" that has drawn attention from the perspective of SDGs, protecting local traditions and nature simply by eating it.

A. We expect it to take about 90-120 minutes (including cooking, eating, and explanation).

A. Same-day reservations are possible if there is availability, but advance reservations are recommended.

A. We have staff who can provide guidance in simple English. However, since it is not native-level support, if you are accompanied by an interpreter, we would appreciate their assistance.
Q. What if I can't drink wine?
A. Please don't worry, we will provide Yamanashi grape juice.
Q. Is it held even on rainy days?
A. Because it is held in an indoor facility, you can participate without any problems even in rainy weather.

A. Yes, we accept group reservations for up to 80 people.
